This could be really good, though it wouldn't technically be a LAN, it'd be part of a WAN. You'd have to make sure the connection is good, and probably you'd want to free up as many resources as possible to make it work well. I have used screen-sharing programs before and they can be sketchy at best - not the best thing to need split-second timing on. However, if you have a dedicated server for JUST that, it could be cool. maybe you could institute some kind of login for people who could meet up and play together, not just with you... have like a meeting place and such... one person could host, another could join... it's got real potential!

This can't happen. Not in an easy and playable way, thou.
1. Only one person can be using the computer with Remote Desktop.

2. I've used WinVNC and other screen sharing programs (Team Viewer is one of the best and easiest to use) but you both need heluva good connection to be able to (1) watch the 40fps game as fast as Igor moves on the screen and (2) send/receive the commands from the remote keyboard. At best the second player can stay in the corner, escaping all fruits while the first player kills all the fruits.

3. A dedicating server won't suit this game. It will be like two players playing remotely, not just one :). Imagine 200 ping at hammerfest :D. You won't be able to escape anything ^.^
