will the other game modes ever become available!? and what are the two you can unlock and how do you unlock them?

You can unlock Time Attack and Two Players Mode.

Two Players: Finish the quest of items and you get it. Then you can play with two players instead of one

Time Attack: Get (hit the red button in level 23 and go through the vortex which will appear; but be careful, the following levels are quite difficult. After those levels you get the star), then you start a quest named "Shinobi Do!" where you need Ninja Items ( and a few others), and when you have finished that quest, you can play in Ninjutsu mode and get those stars: After you got 100 of them (that's not too much), you unblock Time Attack mode.
Time Attack is just a playing mode where you have to beat certain levels as fast as possible.

i usally get stuck on bannanas, highest lev 19, any help plz?

If you keep playing, you will become good. Ryu is right, practice is the best way to beat the game.
