I did a bit of calculating, and I found that if you have all items unlocked, you have around a 40% chance of getting a level-skipping item. (39.3% with a +/-1% error margin)

You have pretty bad calculations. Play a game and tell me how many level-skipping items you had .

I would say that are almost certainly level skipping.
also let you get though any level quite easily, so I'd consider them level skipping also.

Whenever an item transforms a large apricot (aka any item that ruins order), the baby apricots don't appear. Just a bit of useful knowledge. If an order-spoiler appears and you don't want to fight those pesky little guys, then grab it !

(and others) can be order spoilers, but you will still get the two baby apricots. (and others) kills the apricot and don't transform them, but kill them, however you still get the big crystal.

By "order-spoiler" I actually meant any item that necessarily spoils order, as soon as you pick it up. The others you mentioned I consider a different category altogether (although they are still a huge risk).

Soo, a fireball item lets you have the giant crystal without needing to deal with the small apricots. Good to know.
